Safety of Overnight Refrigerated Watermelon Slices for Consumption

摘要: 为了解隔夜冷藏对鲜切西瓜食用安全性的影响,本研究参照国标GB 4789.2-2016检验方法对福州市售3种不同品种西瓜的新鲜切面、隔夜冷藏后切面和隔夜冷藏后切面表层下2 cm处样品的菌落总数进行分析。结果发现隔夜冷藏后同一品种西瓜在新鲜切面、隔夜冷藏后切面和隔夜冷藏后切面表层下2 cm处样品的菌落总数上均无显著性差异。同时采用基于细菌16S rRNA基因序列分析方法,对3种不同品种西瓜切面菌落总数平板内不同形态细菌菌落进行分析,结果表明不同形态细菌菌落归属于葡萄球菌属Staphylococcus,芽孢杆菌属Bacillus、肠杆菌属Enterobacter、埃希氏菌属Escherichia和欧文氏菌属Erwinia等5个属,多是空气和土壤环境常见细菌种类,且为致病性较弱的菌株类型。因此,鲜切西瓜在隔夜冷藏后不存在因细菌大量增殖导致的食用安全性问题。Abstract: Safety of overnight refrigerated watermelon slices for food consumption was studied. The total plate counts on samples of fresh-cut surface, fresh-cut surface after overnight refrigerated storage, and 2 cm beneath fresh-cut surface after overnight refrigeration of three varieties of watermelons sold in Fuzhou were determined according to the method described under GB 4789.2-2016. The results showed no significant difference on samples from a same watermelon cultivar. The 16S rRNA gene sequences of the microorganisms isolated from the samples indicated that they were mainly Staphylococcus, Bacillus, Enterobacter, Escherichia and Erwinia genera. Since most of them commonly exist in the air and soil and are of relatively low health concerns, the fresh-cut watermelon after overnight refrigeration ought to be safe for consumption.
