美洲大蠊对肉鸡肉质性状的影响

Effect of Periplaneta americana on meat quality traits of broilers

  • 摘要: 将396羽1日龄雄性黄羽肉鸡随机分置于4个处理中,每处理设3个重复,每重复33羽。对照组饲喂基础日粮,试验组分别用2.0%、1.0%和0.5%美洲大蠊虫粉等比例替代基础日粮中的鱼粉,分2个阶段饲养至70d,进行屠宰、测定胸肌的肉质性状。结果表明:各处理组胸肌的pH值、滴水损失率、烹饪损失率及剪切力差异均不显著(P>0.05);随着美洲大蠊虫粉添加比例的提高,胸肌pH值、滴水损失率、烹饪损失率及剪切力均呈下降趋势(P>0.05)。

     

    Abstract: Effects of Periplaneta americana on breast meat qualities of broilers were studied.396 male broilers at one-day old were randomly allotted to control group fed with basal diet and three treatment groups fed with Periplaneta americana of 2.0%,1.0% and 0.5%,replacing fish meal in basal diet.There were three replicates with 33 broilers in each group,The experiment was lasted for 70 days.The results showed that significant differences are not observed in pH,drip loss,cooking loss and shear force of breast meat among all groups(P>0.05),there is a tendency of decrease in these indexes as Periplaneta americana is increased in diet(P>0.05).
